Avalanche Bark

I don’t want to be dramatic, but this copycat Avalanche Bark is the greatest treat in all the land. End my food blogging career now because I’ve peaked. If you want an easy treat that’ll last all week, keep reading.

If you’ve ever been to Rocky Mountain Chocolate Factory, you may have had their delicious peanut buttery Avalanche Bark. I tried my hand at recreating it and all I can say is wow. This is easier than making Rice Krispy Treats and tastes fancier than a Rice Krispy Treat. It’s so freaking tasty, I don’t know how I haven’t made it until now.

All you have to do is melt some white chocolate melting wafers with peanut butter, stir in Rice Krispies Cereal, mini marshmallows, and mini chocolate chips. In 30 minutes you have the most perfect little treat ever created.

Don’t pack the mixture down too tight. Just gently press it out to the edges. Much like rice krispy treats, you don’t want to smash the cereal down or it’ll be dense.

These are perfect to pack up for a picnic or school lunches and they’d make a perfect make-ahead game night or party dessert! A week later, they still taste like the day I made them. I hope you’re as obsessed with this recipe as I am!

Avalanche Bark

2 10-oz bags Ghirardelli white chocolate melting wafers
1/2 cup creamy peanut butter
4 cups Rice Krispies cereal
2 cups mini marshmallows
1/2 cup mini chocolate chips

  1. Spray a 9×13″ pan with nonstick spray, line with wax paper, and spray again.
  2. Melt white chocolate melting wafers according to package directions, whisking in peanut butter before the last 30 seconds in the microwave. Gently stir in Rice Krispies Cereal.
  3. Cool 5-10 minutes (the mixture shouldn’t feel warm to the touch), then gently stir in mini marshmallows and chocolate chips.
  4. Spoon into prepared pan, refrigerate for 30 minutes to set, then cut into squares.
